Covercrop Growing

In the winter, when its too cold to grow vegetables, we keep the soil covered with grasses and legumes. This not only keeps the soil from washing away during winter storms, but also keeps the soil alive and active.

In this photo, taken during December, you can see most of the fields are in covercrops.
